A SIMPLE TOMATO & BASIL PASTA

So since I have been on the road, Bangkok has transitioned into the rainy season where it buckets down once a day at the same hour, for about an hour or two. Pretty reliable huh? In the mean time, my basil and aloe vera plants have evolved from cute and innocent to overgrown and monstrous! No complaints here though, it just means I have more goodies to work with! The basil has been pesto‘d and the aloe vera has been cut, peeled, and zip locked for putting on my skin.

This morning my grumbling stomach was yelling out for something savoury, so I snipped off a few sprigs of basil, washed and halved a handful of cherry tomatoes, and cooked some rice penne that was hibernating in the pantry. Once cooked al dente, the penne was drained and tossed with the tomatoes and basil that I had ripped up with my fingers, along with a good dose of extra virgin olive oil and some sea salt.

Ping! Breakfast in 8mins! It was even more delicious with a light dusting of pecorino and a mug of coffee but if you are too hangry then those details can be left out.
