LARB MOO, THAI ISAAN PORK SALAD.

This dish is mega fast to make. It’s one of my go-to meals when I’ve had a long day and craving something light and warm without too much work. As a kid, I wasn’t too fond of this dish, it was a little too wild in flavour for a youngster with a sensitive palate. Though, as I grew into my taste buds, they soon warmed up to this dish. Think a warm pork salad tossed in a lime and fish sauce dressing, brightened with fresh coriander, mint, and spring onions. Oh yeah, there’s sweetness from the finely sliced red shallots and a wonderful toasted crunch from roasted sticky rice. Eat this with plain rice or even better, with sticky rice and fresh vegetables like a punchy raw cabbage, sweet Thai basil, and fragrant raw snake beans. Quite the healthy combo!
